Vin de paille or straw wine is very rare because it is difficult to produce. After harvest, the grapes are dried for several weeks on a bed of straw before vinification. The wine is then matured for three years in small barrels before being bottled and sold. Served as an aperitif, digestive or at table, it is a perfect wine to accompany foie gras or dessert. This wine is not restricted to the Jura, for those in the know, it can also be found in the Rhône, for example.
