Vin jaune or yellow wine is exclusively made with Savagnin grapes, grown in the terroirs of the Jura. The method of its making is unusual, in that it is kept in oak barrels for 6 years and 3 months in oak barrels without topping-up (filling up the headspace created in the barrels as the wine evaporates). Instead, a layer of yeast forms on the surface, protecting the wine from the air. This process gives it a taste very different from other white wines, appreciated for a long time by enlightened wine lovers. The wine is golden in colour with intense aromas, strongly marked by oxidation.
